There's a Buffy/Giles shipper community (http://www.livejournal.com/community/allthejellies/) on LiveJournal that might be of interest to you; also, White Hats (http://www.forty-two.co.nz/cgi-bin/wh/whitehats.pl) has some really intriguing/informative essays regarding the pairing. I have to say, not much of the fanfic has wowed me too much, and I actually liked quite a few of the canon "Buffy"/"Angel" pairings ... but it was still kind of a naughty, quivery-feeling kind of ship to board.
